Charset, i'm going crazy !!!

Hi, this is my first post :-).
Here is my problem: i create a dvd database and php pages to show it on my pc, i'm italian so there are letters like àèìòù i need to use. i want to use utf8 (utf8_general_ci or utf8_unicode_ci) or in alternative latin1 (latin1_general_ci) but i have problems according php apache mysql phpmyadmin and windows. plz someone can help me to correctly configure each config file ?
