well these are some extra features of phpMyAdmin, and if you want you can turn them on by following the instructions in the documentation link.
i have the same problem, and even though it doesn't effect anything in a bad way, i just wanted to get rid of the warning. so here is what i did:
note: i will call phpMyAdmin root folder "pma".
check if you have "pma/config.inc.php" if not, go in your root folder and copy "config.sample.inc.php" to "config.inc.php"
then you should set those variables that are missing.
if you have a clean install, and all those vars are already there in the config file commented. All you should do is uncomment those lines.

nope it's not a serious problem, the odds are that if you don't know how to enable those options and what those options are, you are probably not going to need them. but its still nice to enable everything just to get rid of that ugly red line ..
