catch all email testing ???

don't know if anything is out there like this, but i write all of my sites with wamp and then upload them to the server that is live on the internet.
my question out to everyone is how do you test your forms that are emailed ?
what i am looking for is like a catch all function, that would possibly show me a summary of the message that WOULD be sent out from the live server.
ie: a mail box that would show from, to, subject, and then the message that would have been sent.
any ideas?
